Rice & Beans (Haitian Style) pairs tender kidney beans with fluffy long-grain rice perfumed by cloves, bay leaves, and fresh herbs.     Put the beans in a large pot and cover them with 3 inches of water. Bring to a boil, then reduce the heat and simmer for 1 1/2 hours, or until tender. Drain, keeping the cooking liquid.

    Heat the oil in a large skillet over medium heat. Sauté the shallot and the garlic until fragrant. Stir in the cooked beans and cook for 2 minutes. Measure the reserved liquid and add enough water to make 5 cups; pour this into the skillet. Stir in the uncooked rice. Season with the bay leaves, adobo seasoning, salt, pepper, and cloves. Lay the sprigs of parsley and thyme, and the scotch bonnet pepper on top, and bring to a boil. Reduce the heat, cover, and simmer for 18 to 20 minutes. Remove the thyme, parsley, and scotch bonnet pepper before serving.
