Towering Yorkshire Puddings

Towering Yorkshire Puddings bake up crisp at the edges with tender, custardy centers and a rich, eggy flavor. Heating oil in the pan helps them rise dramatically, delivering golden shells perfect for catching pan drippings. Serve alongside roast beef and gravy for a classic Sunday dinner or any time you want an impressive, airy side.

Towering Yorkshire Puddings
  1. 1

Heat the oven to 450 degrees F (230 degrees C).

  2. 2

Whisk the milk and eggs together in a large bowl. Whisk in the flour, 1 cup at a time, until smooth and well blended. Set aside.

  3. 3

Add 1 teaspoon oil to each cup of a 12-cup muffin tin.

  4. 4

Put the tin in the preheated oven until the oil is smoking, 5 to 10 minutes. Take it out of the oven and, working quickly so the oil remains hot, ladle about 1/4 cup batter into each cup.

  5. 5

Return the tin to the oven and bake for 30 to 35 minutes, until the puddings have risen and are golden brown.

  6. 6

    Serve right away and enjoy.
