    Place black-eyed peas in a large container and cover with cool water by a few inches; soak for 8 hours to overnight.

    Put ham hocks in a stockpot with 6 cups water. Bring to a boil, then reduce the heat to low, cover, and simmer until the meat is falling off the bone, about 90 minutes. Remove the ham hocks and reserve for another use. Refrigerate the ham stock for 8 hours to overnight.

    Drain and rinse the black-eyed peas well; transfer to a slow cooker. Nestle one of the cooked ham hocks into the peas; add the onion, the garlic, red pepper flakes, and sugar.

    Skim the congealed fat from the surface of the ham stock and discard it. Pour the stock into the slow cooker. Add enough water to cover the peas by 1 1/2 inches.
