Spiced Honey Vodka

Spiced Honey Vodka blends warm baking spices, bright citrus zest, and a whisper of vanilla and mint into a smooth, lightly sweet spirit. Inspired by Krupnik, it develops layered aromatics during a long steep, yielding a balanced sipper with gentle heat and honeyed depth. Ideal for gifting, sipping neat after dinner, or mixing into festive cocktails.

Spiced Honey Vodka

    In a saucepan, bring 1 cup honey and water to a boil while stirring. As soon as it boils, reduce the heat to low. Scrape the vanilla bean seeds into the mixture and add the pod. Stir in the ginger. Add the orange zest, lemon zest, mint, nutmeg, cloves, peppercorns, star anise, and cardamom. Cook on low heat, stirring, for 5 to 8 minutes.

    Pour the mixture into a sealable, wide-mouth bottle. Add 1 liter vodka and seal. Let the ingredients steep together for 3 weeks, shaking occasionally.

    Strain the vodka through a strainer or cheesecloth and taste for sweetness. Add more honey or vodka to reach the desired sweetness (it should taste quite sweet, but preferences vary). Serve neat at room temperature.
