Tomato Bredie

Tomato Bredie is a South African lamb and tomato stew that simmers gently until the meat is tender and the sauce turns rich and tangy-sweet. Bay leaves, pepper, a touch of vinegar, and brown sugar round out the flavor, with soft potatoes soaking up the gravy. Ideal for a comforting dinner on a cool evening.

  1. 1

Warm the oil in a large, heavy-bottomed saucepan over medium-high heat.

  2. 2

Coat the lamb in flour, then shake off any excess.

  3. 3

Brown the lamb in the hot oil on all sides. Move the lamb to a plate, leaving the drippings in the pan.

  4. 4

Cook and stir the onion in the drippings until softened, about 5 minutes.

  5. 5

Stir in the tomatoes. Return the lamb chops to the saucepan; season with bay leaves, bouillon, salt, brown sugar, white peppercorns, black pepper, and Worcestershire sauce.

  6. 6

Cover, lower the heat, and simmer for 1 hour and 15 minutes, stirring occasionally to ensure nothing sticks to the bottom of the pan.

  7. 7

Stir in the potatoes; continue cooking until the potatoes are done and the meat is tender, about 45 minutes more.
