Shrimp and Wasabi Sushi Rice Bites

Shrimp and Wasabi Sushi Rice Bites offer a cool, briny snap from shrimp and edamame balanced by creamy, spicy wasabi mayo. Shrimp and Wasabi Sushi Rice Bites

    For the wasabi aioli, add the wasabi paste, soy sauce, and mayonnaise to a small zip-top food storage bag. Gently squeeze the bag to mix the ingredients. Taste and add more wasabi paste if you like. Seal the bag and refrigerate.

    Spoon about 1/8 cup of the cooked, cooled rice into each of 8 silicone muffin cups. Press the rice firmly into each cup with damp fingertips. Press some of the rice up the sides of each cup. Refrigerate for at least 20 minutes.

    When ready to serve, fill the rice cups with matchstick carrots, matchstick cucumbers, and edamame. Place one shrimp half on top of each filled cup.

    Cut the tip off one corner of the wasabi aioli bag and squeeze the contents over the top of each filled cup. Sprinkle with black sesame seeds. Serve right away with pickled ginger.
