Zucchini Boats on the Grill

Set up the grill for indirect medium heat.

Put the zucchini in a large pot and add enough water to cover. Bring to a boil and cook for 5 minutes. Drain and let cool, then cut in half lengthwise. Scoop out the pulp, leaving about 1/4 inch of flesh next to the skin. Chop the pulp into small pieces.

Combine the zucchini pulp, bread pieces, jalapeño, Cheddar cheese, bacon bits, onion, tomato, chile peppers, and olives in a large bowl and stir until mixed. Season with basil, seasoned salt, and pepper; mix well.
