50-Minute Corned Beef Brisket

    Fill a covered container with enough water to submerge the corned beef. Add brown sugar and stir until dissolved. Remove the corned beef from its packaging and rinse well to wash off the curing residue. Place it in the water in the container; keep the spice packet. Add more water to cover if needed. Soak for 8 hours to overnight.

    Combine 1 1/2 cups water, the spice packet, and pickling spice in a multi-functional pressure cooker (such as an Instant Pot). Place a rack insert in the pot.

    Remove the beef from the soaking liquid and season both sides with garlic powder. Set the beef on the rack, fat-side up, cutting it in half if needed to fit. Close and lock the pressure cooker lid. Choose high pressure according to the manufacturer's instructions; set the timer for 50 minutes. Allow 10 to 15 minutes for the pressure to build.

    Release the pressure using the natural-release method per the manufacturer's instructions, about 10 minutes. Move the corned beef to a cutting board. Cover with aluminum foil and let it rest for a few minutes before carving.
