    Place the squash halves, cut-sides down, in 1 inch of water in a baking dish. Bake in the preheated oven until the flesh is tender, about 45 minutes.

    Meanwhile, heat olive oil in a large skillet over medium heat; add the sausage. Cook until browned, breaking it into small pieces as it cooks; set aside.

    Once the squash halves are tender, discard the water from the baking dish; flip the squash halves cut-sides up. Generously sprinkle brown sugar into the squash cavities, reserving about 1/4 cup. Fill the cavities with the browned sausage; top with the reserved brown sugar. Return the squash to the oven; bake until the sugar begins to melt, about 15 minutes.
