Angel Biscuits

    Dissolve the yeast in warm water in a small bowl, then let it sit until creamy, about 5 minutes.

    Meanwhile, mix the flour, sugar, baking powder, salt, and baking soda in a large bowl. Cut in the shortening with a pastry blender until the mixture looks like coarse meal.

    Stir the buttermilk into the yeast mixture until blended, then add it to the dry ingredients and stir until just moistened. Turn the dough out onto a floured surface and knead 4 to 5 times.

    Roll the dough on a lightly floured surface to 1/2-inch thickness. Cut out twenty-four 2 1/2-inch circles. Arrange the circles on lightly greased baking sheets so they are just touching. Cover and let rise in a warm, draft-free spot until nearly doubled in size, about 1 hour.
