Greg's Southern Biscuits

Greg's Southern Biscuits deliver lofty layers with a crisp, golden top and a tender, fluffy crumb. Cold butter and lard are grated into the flour, then gently folded to create flakiness, while a hint of bacon drippings adds nostalgic, savory depth. Ideal for breakfast or brunch, they shine alongside eggs, gravy, or fruit preserves.

  1. 1

Preheat the oven to 450 degrees F (230 degrees C). Lightly grease a baking sheet with 1/2 teaspoon of lard.

  2. 2

Combine the flour, salt, baking soda, and baking powder in a bowl. Grate the frozen butter and 2 tablespoons frozen lard into the flour mixture using a cheese grater; stir lightly 1 or 2 times to combine. Use your fingers to make a well in the center of the flour mixture, then pour the bacon drippings and buttermilk into the well. Using just your fingertips, stir lightly and quickly to bring the dough together before the butter and lard melt. The dough will be sticky.

  3. 3

Scrape the dough onto a floured surface and gently pat it flat. Dust the top with flour, then fold it in half; pat down, fold again, and repeat until you have folded the dough 4 or 5 times.

  4. 4

Using a rolling pin, roll the dough into a square about 1 inch thick. Cut the dough into rounds with a 2 1/2-inch biscuit cutter or the floured rim of a drinking glass by pressing straight down (twisting the cutter will seal the edges and prevent the biscuits from rising). Arrange the biscuits on the prepared baking sheet so the edges just touch.

  5. 5

Bake in the preheated oven until risen and lightly golden brown, 15 to 20 minutes.

How easyChef Pro Scores This Recipe

easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.

The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.

Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.

Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
