Preheat the oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.

Bring a large pot of water to a boil over high heat. Lower the heat to medium and add the asparagus. Cook until slightly softened, 2 to 3 minutes. Remove the asparagus and immediately plunge them into cold water. Drain, then blot the asparagus dry with a paper towel.

Crack the egg into a small bowl and beat lightly. Measure about 1 tablespoon of the beaten egg and set it aside for the egg wash. Add the ricotta, Asiago cheese, Italian seasoning, salt, and pepper to the remaining egg and whisk until well combined.

On a lightly floured surface, roll the puff pastry into a large rectangle, about 10x15 inches, and place it on the prepared baking sheet. Dip a pastry brush into the remaining beaten egg and brush a 1-inch border around the pastry edges.

Spoon the ricotta filling onto the center of the puff pastry and spread it into an even layer, leaving a 1-inch border on all sides. Arrange the asparagus over the filling. Drizzle the asparagus with olive oil and season with salt and pepper, if desired.
