Bacon-Wrapped Duck Breast Halves

Bacon-Wrapped Duck Breast Halves balance rich, succulent duck with smoky, crisp bacon for a satisfying bite in every slice. A brief brine and tangy Italian marinade keep the meat tender and flavorful, making it a great centerpiece for a cozy dinner or special weekend meal alongside wild rice and warm bread.

Bacon-Wrapped Duck Breast Halves
  1. 1

Mix the salt and water. Reserve 2/3 of the mixture, and pour the remainder into a glass baking dish. Soak the duck in the salt water overnight to remove the gamey flavor. Change the salt water twice, or until it is mostly clear.

  2. 2

The next morning, discard the salt water, pour salad dressing over the duck breasts, and marinate for at least 8 hours.

  3. 3

Preheat the oven to 350 degrees F (175 degrees C). Wrap each breast half with one strip of bacon, and secure it with a toothpick. Place the breasts in a 9x13 inch baking dish.

  4. 4

Bake for about 1 hour, or until the bacon is crisp and the duck is cooked through.
