Oven-Baked Onion Bhajis
Oven-Baked Onion Bhajis deliver crisp edges and tender centers with layers of warm spice from turmeric, cumin, coriander, and chili. The sweetness of baked onions pairs with nutty chickpea flour for a light, fragrant bite that’s great as a starter, snack, or side for curry night. Serve hot with cool yogurt or tangy chutney for contrast.

Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with parchment paper.

Cook the onions: Heat oil in a skillet over medium heat. Add onions and cook, stirring, until translucent, 6 to 8 minutes. Stir in chili powder, then add turmeric, coriander, cumin, and ginger and mix until evenly combined. Remove from the heat.
- 3
Make the batter: In a bowl, mix chickpea flour, cumin, coriander, and salt until well combined. Stir in onions and tomato purée, then add a little water until the mixture is wet and easy to stir.
- 4
Drizzle 1 teaspoon olive oil onto the prepared baking sheet. For each bhaji, place 2 tablespoons of the onion mixture on the baking sheet and flatten slightly with the back of a spoon.
- 5
Bake in the preheated oven for 20 to 25 minutes. Drizzle the remaining oil over the bhajis and continue baking until golden brown, about 25 more minutes.
