    Place the chicken breasts on a plate and season with salt and pepper.

    Cut the chicken into bite-sized pieces. Heat oil in a wok or large skillet over medium heat. Add the chicken and cook, stirring often, until browned and no longer pink in the center, about 5 minutes. Remove from the wok and set aside.

    Add more oil to the wok over medium heat. Add the cooked rice and stir for about 1 minute. Add the garlic and ginger; cook and stir for 1 minute more, then stir in the egg and cook until the egg is opaque, about 2 minutes.

    Reduce the heat to medium-low, then return the chicken to the wok. Stir to warm it through, then add the soy sauce and sesame oil. Stir and taste, adding more of either to your preference.
