Beer Can Roasted Chicken

    Preheat an outdoor grill to low heat and lightly oil the grate.

    Melt 1/2 cup butter in a small skillet. Stir in 1 tablespoon garlic salt, 1 tablespoon paprika, salt, and pepper.

    Pour out 1/2 of the beer, leaving the rest in the can. Add the remaining butter, garlic salt, paprika, salt, and pepper to the beer can. Set the can on a baking sheet or disposable pan. Stand the chicken upright on the beer can, inserting the can into the chicken cavity. Baste the chicken with the melted, seasoned butter.

    Place the baking sheet with the beer and chicken onto the preheated grill. Cook over low heat until the bone is no longer pink and the juices run clear, about 3 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should register 165 degrees F (74 degrees C).

    Take it off the grill, cover with a doubled sheet of aluminum foil, and let it rest in a warm spot for 10 minutes before slicing.
