    Check the walleye fillets to make sure all bones and skin are removed. Cut the fillets into manageable pieces if needed.

    In a shallow bowl, mix the flour, garlic powder, pepper, and salt. Put the beaten eggs in a separate shallow bowl. Spread the cracker crumbs on a plate.

    Heat the oil in a deep fryer or large cast iron skillet to 375 degrees F (190 degrees C).

    Dip the fillets in the flour mixture, then in the beaten egg, and finally coat them evenly with the cracker crumbs; set the fillets aside on a plate.

    Using tongs, carefully lower 2 fillets into the hot oil; cook until golden brown, about 3 minutes per side. Transfer to a paper towel-lined plate; repeat with the remaining fillets. Serve with lemon wedges.
