Brandi's Wontons
Brandi's Wontons are tender pork-and-cabbage dumplings with gingery, savory notes and a light, springy bite. Boiled until just done and paired with a bright soy–rice vinegar dipping sauce, they’re satisfying enough for a meal yet perfect for make-ahead appetizers thanks to their freezer-friendly nature. Serve them hot when you want something comforting and full of flavor.

Bring a large pot of lightly salted water to a boil. Add napa cabbage and cook uncovered until tender, about 1 minute. Drain in a colander, then immediately plunge into ice water for several minutes until cold to halt the cooking. Once the napa cabbage is cold, drain thoroughly, squeezing out any excess water, and transfer to a large bowl. Stir in ground pork, 2 tablespoons of soy sauce, sherry, cornstarch, 1 1/2 teaspoon of minced ginger, and green onion.

Lay out half of the wonton wrappers on a large sheet of waxed paper. Lightly brush each wrapper with the egg white. Spoon a heaping teaspoon of the pork mixture into the center of each wrapper. Gather all 4 corners of each wrapper and pinch the edges to seal in the filling. Repeat with the remaining wonton wrappers.

Bring a large pot of water to a boil and drop the wontons into the boiling water. When the wontons float to the surface, cook them for 1 minute longer. Lift them out with a slotted spoon as they finish and place on a platter.

For the dipping sauce, mix 1/4 cup soy sauce, seasoned rice vinegar, and 2 tablespoons of shredded fresh ginger in a bowl.
