    Coat a 9x5-inch loaf pan with cooking spray.

    Coarsely shred the zucchini.

    Wrap the shredded zucchini in a clean kitchen towel or cheesecloth.

    Squeeze well and discard the excess liquid, then set aside.

    Whisk the flour, baking powder, and salt together in a large bowl.
