    Preheat the oven to 375 degrees F (190 degrees C) and grease a 9x13-inch baking dish.

    Heat 2 tablespoons oil in a skillet over medium-high heat. Fry the tortillas, one at a time, for 5 seconds per side to soften and make them pliable. Add more oil to the skillet as needed.

    Drain the tortillas between layers of paper towel and keep them warm.

    Divide the chicken, 10 ounces Monterey Jack cheese, and the onion among 12 tortillas.

    Roll each tortilla and place it seam side down in the prepared pan.

    Melt the butter in a saucepan over medium heat. Add the flour and whisk until the mixture starts to boil. Gradually whisk in the chicken broth, stirring until thickened. Stir in the sour cream and green chiles, stirring occasionally. Heat through but do not let it boil.
