To marinate: The day before making the chili, in a large bowl mix the sage, thyme, basil, marjoram, cumin, chili powder, garlic powder, salt, black pepper, and cayenne pepper. Cut the beef and pork into 1/2 inch cubes and add them to the bowl. Toss the meat with the seasonings, cover the bowl, and refrigerate overnight.

To make the chili: In a large pot over medium low heat, start heating the tomatoes, tomato sauce, salsa, and 2 teaspoons chili powder. Meanwhile, in a large skillet over medium heat, heat the bacon grease. Add the jalapeno peppers and cook until soft, 1 to 2 minutes, then add them to the large pot.

In the same skillet, fry the beef and pork with the onion and garlic in small batches, about 15 to 20 minutes per batch. As each batch finishes, add it to the large pot.

When everything is in the large pot, season with salt to taste. Bring to a boil. Cover, reduce the heat to medium low, and simmer for about 3 hours.
