Creamy Corn and Orzo
Creamy Corn and Orzo brings tender, lightly toasted orzo together with sweet bursts of corn and mild green chiles, all folded into melty Cheddar and Parmesan for a rich, gently spicy bite. It’s a comforting one-pan side that’s especially good alongside grilled or barbecue chicken and fits perfectly into busy weeknights.

- 1
Place a heavy saucepan over medium heat. Add the butter and the onion; cook, stirring, until the onion is fragrant, about 5 minutes.
- 2
Add the garlic paste, orzo, corn, and thyme. Cook, stirring, until the orzo starts to turn golden, about 2 minutes.
- 3
Pour in the chicken broth; season with salt and pepper to taste. Bring to a boil, then reduce the heat slightly and simmer, stirring often and scraping the bottom, until the orzo is tender with a slight bite, 8 to 10 minutes.
- 4
Stir in the green chiles, milk, Cheddar cheese, Parmesan cheese, and green onion, and cook, stirring, until fully heated and the cheese is melted.
- 5
Taste and adjust the seasoning; add more salt if needed. If it is too thick, stir in a little broth. Serve warm.
