    In a large pot, combine 2 cups water, juice of 1 lime, garlic powder, onion powder, thyme, peppercorns, and salt; bring to a boil. Add the pork, lower the heat to medium-low, and simmer until the pork is very tender, 1 to 1 1/2 hours. Add more water as needed to keep the pork submerged.

    Remove from heat and let the pork rest in the broth for 30 minutes. Move the pork to a cutting board; shred with 2 forks, discarding excess fat. Set aside.

    Heat the oil in a large skillet over medium-high. Add the pork and fry until nearly crisp, about 5 minutes. Add the onion and the garlic; cook until the onion is crisp-tender, about 10 minutes more.
