    Place 6 eggs in a large pot or heatproof container of water with a sous vide cooker. Set it to 148.1 degrees F (64.5 degrees C) and cook for 1 hour. Transfer the eggs to a bowl of lukewarm water and let them cool for 10 minutes.

    Turn the kitchen faucet to a very low stream. Crack each cooked egg carefully into your hand and let the white slip away under the running water. Put the yolks into a bowl.

    Mix the flour, sea salt, and baking powder in a small bowl. Whisk the remaining egg in a second bowl. Spread the bread crumbs on a plate.

    Heat about 1 1/2 inches of oil in a deep saucepan over medium heat to 360 degrees F (182 degrees C).

    Gently roll one yolk in the flour mixture. Dip it into the beaten egg and let the excess drip back into the bowl. Coat it in the bread crumbs. Set the breaded yolk on a plate and repeat with the remaining yolks.

    Carefully lower the yolks into the hot oil, working in batches if needed. Fry until lightly golden brown, about 30 seconds. Move them to a paper-towel-lined plate to drain. Repeat frying and draining if needed. Sprinkle lemon zest and truffle salt on top.
