    Heat olive oil in a large skillet over medium heat. Add the bacon and cook, turning often, until crisp and browned, about 10 minutes. Drain on paper towels. Crumble when cool and set aside.

    Add the onion to the same skillet and cook, stirring, until translucent, about 5 minutes. Stir in the chicken, sausage, garlic, thyme, bay leaves, and black pepper; cook until the chicken is browned, 5 to 8 minutes. Stir in the tomato paste.

    Transfer the chicken mixture to a slow cooker. Stir in the great Northern beans, diced tomatoes, and bacon, then cover the cooker. Cook on Low until the cassoulet is thickened and the chicken is very tender, 4 to 5 hours. Sprinkle with parsley before serving.
