Bacon and Egg Fried Rice

    Bring water to a boil in a saucepan. Add the rice and stir. Lower the heat, cover, and let it simmer for 20 minutes. At the same time, season the eggs with salt and pepper.

    Heat 1 teaspoon oil in a small frying pan. Pour in the eggs. Swirl to coat the bottom of the pan evenly with the eggs; cook for about 3 minutes. Flip the eggs, cook 1 minute more, then move them to a cool surface. Let them cool, slice into thin strips, and set aside.

    Put the bacon in a large, deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble, and set aside.

    Add the remaining 2 teaspoons oil to the skillet with the bacon fat. Stir in the cooked rice; break up any clumps and toss to coat with oil. Mix in the bacon, soy sauce, peas, eggs, and green onions. Stir and cook until hot, about 3 minutes.
