    In a large skillet over medium heat, melt the butter. Add the minced garlic and cook until fragrant, about 30 seconds.

    Stir in the thawed, riced cauliflower, salt, pepper, and nutmeg. Add the chicken broth and bring to a boil, stirring frequently.

    Cook, covered, for about 8 minutes, then uncover and continue cooking and stirring until most of the liquid evaporates, an additional 5 to 8 minutes.

    Use an immersion blender to purée the cauliflower until smooth. If you do not have an immersion blender, spoon the cauliflower into a blender to purée. When smooth, transfer to a serving bowl and garnish with snipped chives.
