Gather the ingredients.
- 2
Fill a large bowl with cold water. Squeeze the juice from one lemon wedge into the water. Trim the tops and stems from the artichokes, cut them in half from top to bottom, and scoop out the choke; place the halves in the bowl of lemon water to keep them from browning.
- 3
Bring a large pot of water to a boil. Add the artichokes to the boiling water and cook until tender, about 15 minutes. Drain. Meanwhile, preheat an outdoor grill to medium-high heat.
- 4
To make the basting and dipping sauce, squeeze the remaining lemon wedges into a medium bowl; stir in the olive oil and garlic, and season with salt and pepper.
- 5
Brush the artichokes with a coat of the lemon-garlic dipping sauce; place them on the preheated grill and cook, basting with the sauce and turning frequently, until the tips are slightly charred, 5 to 10 minutes. Serve at once with the remaining lemon-garlic sauce.
