Grilled Spiral Chicken Skewers

    Place the chicken breasts between 2 sheets of heavy plastic on a flat, sturdy surface. Use the smooth side of a meat mallet to pound them to a 1/4-inch thickness. Remove the top sheet of plastic. Cut each chicken breast into strips. Roll the strips and thread them onto a skewer.
