Grilled Stuffed Red Snapper
Grilled Stuffed Red Snapper pairs tender fillets with a buttery seafood and bread crumb topping that turns golden on the grill. Bright aromatics and herbs lift the sweet shrimp and crab, while indirect heat keeps the fish moist and flaky. Ideal for a summer dinner outdoors when you want rich flavor with a toasty finish.

- 1
Preheat the coals in a covered grill to high heat.
- 2
To make the stuffing: Melt 2 tablespoons butter or margarine in a skillet, add the bread crumbs, and saute over medium-high heat, stirring, until the bread crumbs are browned; transfer the bread crumbs to a mixing bowl.
- 3
Melt 1 tablespoon butter or margarine in the skillet and saute the onions, celery, and garlic until tender; add them to the bread crumbs in the mixing bowl, then stir in the shrimp, crab, parsley, salt, and pepper and toss gently.
- 4
Cut foil to make a double-thick 18x12-inch rectangle, lay the fish fillets on the double-thick foil, and mound the stuffing on top of the fillets.
- 5
Curl up the edges of the foil to form a tray. In a covered grill, arrange the preheated coals on both sides of the grill and check for medium heat over the center. Set the fish in the foil in the center of the grill rack, cover, and grill for 20 to 25 minutes or until the fish flakes easily.
