    In a small bowl, whisk together the soy sauce, rice vinegar, lime juice, brown sugar, sesame oil, and cornstarch; set aside.

    Heat 1 tablespoon oil in a large skillet over medium heat. Add the mushrooms, red and green bell peppers, and the onion, and cook until the vegetables are just tender, 5 to 6 minutes. Transfer to a plate.

    Add the remaining tablespoon oil to the skillet. Add the ground turkey and cook, breaking it into chunks with a spatula, until lightly browned and cooked through, 5 to 6 minutes. Stir in the garlic and cook until fragrant, 30 seconds to 1 minute.

    Lower the heat to medium-low, return the vegetables to the skillet, stir the sauce well, and pour it over the meat and vegetables. Stir to coat everything evenly, then simmer until the sauce slightly thickens, about 2 minutes.
