Haddock Au Gratin

    Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a medium or large baking dish with butter.

    Rinse the fillets and pat them dry. Season with 1 teaspoon salt and 1/8 teaspoon pepper.

    In a skillet or frying pan, melt the butter over medium heat. Cook the onion in the butter until golden. Stir in the flour until fully blended. Mix in the mustard, 1/2 teaspoon salt, the light cream, and the heavy cream. Cook, stirring constantly, until thickened. Remove from the heat and stir in the cheeses. Pour the sauce over the fish and sprinkle with paprika.
