Herman Sourdough Loaf

    In a small mixing bowl, dissolve the yeast in warm water. Let it sit until creamy, about 10 minutes.

    In a large mixing bowl, combine the yeast mixture with the Herman Starter, oil, 2 cups flour, and salt; mix thoroughly. Add the remaining flour 1/2 cup at a time, stirring after each addition. When the dough comes together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in it, and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in size, about 1 hour.

    Lightly grease a 9x5 inch loaf pan. Punch down the dough, turn it out onto a lightly floured surface, and shape it into a loaf. Place it in the prepared pan. Cover with a damp cloth and let rise until doubled in size, about 40 minutes. Preheat the oven to 375 degrees F (190 degrees C).

    Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and the bottom sounds hollow when tapped.
