Thanksgiving Leftover Turkey Nacho Bites pile tender shredded turkey into crunchy scoop-style chips with a glossy cranberry–jalapeño glaze and a blanket of melty white Cheddar. The balance of sweet heat, mild oniony shallots, and salty crunch makes each bite addictive. Thanksgiving Leftover Turkey Nacho Bites
  1. 1

Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.

  2. 2

Melt the butter in a skillet over medium heat; cook and stir the shallots in the hot butter until softened, about 2 minutes. Stir the jalapeno peppers into the shallots and cook until fragrant, about 2 more minutes. Stir the cranberry jelly into the shallots and peppers until it melts.

  3. 3

Mix the shredded turkey with the jalapeno-cranberry jelly mixture in a bowl until well combined. Arrange the tortilla chips on the prepared baking sheet and fill each chip with 1 tablespoon of the turkey mixture. Top each chip with 1/2 teaspoon of white Cheddar cheese.

  4. 4

Bake in the preheated oven until the cheese on top is melted and the chips are golden, about 10 minutes.
