Assemble all the ingredients.

In a large skillet over medium-high heat, cook the bacon, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels; keep most of the bacon fat in the skillet.

Crumble the bacon and set it aside.

Lower the heat to medium. Cook and stir the onion in the reserved bacon fat until slightly softened, about 5 minutes. Add the potatoes; toss to coat evenly in the bacon fat. Pour in the water and cover the skillet. Cook, stirring occasionally, until the potatoes are tender, about 20 minutes.
