    Assemble all ingredients. Preheat the oven to 400 degrees F (200 degrees C).

    Unfold the puff pastry sheets. Cut along each sheet's fold lines to make 6 equal squares per sheet, for a total of 12 squares.

    Brush each square with mustard (if using).

    Divide the sausage into 12 equal portions and roll each into a small log. Set one log on each square.

    Roll the dough around the sausage and lightly brush the dough with beaten egg to seal.

    Arrange the rolls on an ungreased baking sheet. Brush the tops with the remaining beaten egg.

    Bake in the preheated oven for 10 minutes. Check to make sure they are not burning, then continue baking until puffed and golden, about 10 more minutes. An instant-read thermometer inserted into the center of a roll should register at least 160 degrees F (70 degrees C).
