Mix kosher salt with boiling water in a large bowl, stirring until dissolved. Add cold water and the chicken strips. Refrigerate for 30 minutes to 1 hour. Drain and pat the chicken dry before cooking.

Using a mandoline, slice the zucchini into 1/8-inch-thick slices. Cut the slices into strips about the width of fettuccine. Put the zucchini in a bowl and sprinkle with 2 tablespoons salt to cover. Let sit for 30 minute to soften.

Heat oil in a skillet over medium heat. Add the chicken and cook until browned on all sides, no longer pink inside, and the juices run clear, 5 to 7 minutes. Move the cooked chicken to a bowl.
