Mom’s Favorite Spaghetti Sauce
Mom’s Favorite Spaghetti Sauce simmers into a rich, tomato-forward blend with tender mushrooms, sweet onion, and fragrant basil. A hint of baking soda softens the acidity, while Parmesan adds a savory finish that clings beautifully to pasta. Serve it for family dinners or weekend batch cooking when you want a comforting, homey sauce.

- 1
Gather all the ingredients.
- 2
Combine the whole tomatoes, mushrooms, tomato sauce, tomato paste, water, onions, basil, garlic, sugar, 1 pinch of baking soda, salt, and pepper in a large saucepan. Bring to a boil over high heat while stirring, then lower the heat to a simmer and cook for at least 4 hours.
- 3
Stir in the remaining pinch of baking soda; the sauce will foam. Simmer, stirring occasionally, until thick and nearly brown, making sure to scrape the sides of the pan into the sauce.
- 4
Stir in the Parmesan cheese. Taste the sauce; if it is too tangy or acidic, add another pinch of baking soda and simmer for 30 more minutes.
- 5
Let the sauce cool to room temperature, then cover and refrigerate for 8 hours to overnight. Reheat the next day and serve.
