Place the spareribs in a large pot and add just enough water to cover. Add the soy sauce, 3/4 of the parsley, the garlic, lime juice, rosemary, oregano, and bay leaves. Bring to a boil, then lower the heat and simmer uncovered until the water has fully evaporated, about 25 minutes.

Use a spatula to scrape up the browned bits and softened garlic from the bottom of the pot and toss them with the spareribs; the garlic will melt onto the meat.
