Preheat the oven to 375 degrees F (190 degrees C).

Heat oil in a large Dutch oven over medium-high heat. Season the chicken thighs evenly with 1 teaspoon salt and 1/2 teaspoon pepper.

Place the chicken skin-side down in the Dutch oven; cook without moving until the skin is golden and releases easily from the bottom, about 5 minutes. Flip the chicken and cook for 3 minutes more. Transfer to a plate and set aside. The chicken will not be fully cooked yet.

If the liquid is absorbed before the rice and chicken are tender, add more stock, 1/4 cup at a time. Sprinkle with parsley and squeeze lemon juice over the top.
