    Put the mussels in a large bowl and cover them with cold water; soak to remove any dirt or sand, about 20 minutes.

Stir in the wine, parsley, and margarine, and bring to a boil. Boil until the liquid is reduced by half, about 15 minutes, then season with salt and black pepper.
