    In a large bowl, combine the pomegranate juice, sugar, lemon juice, and salt. Cover and chill for 30 minutes.

    Pour the cold water into a small saucepan and sprinkle the gelatin over it; let sit for 1 minute. Cook over low heat, stirring, just until the gelatin dissolves, about 2 minutes. Stir this into the pomegranate mixture. Add the cream, then beat with an electric hand mixer on medium speed until the mixture is foamy, about 3 minutes.

    Freeze in an ice cream maker following the manufacturer's instructions until the sherbet is soft-serve in consistency, 1 to 1 1/2 hours.
