Put the cooked rice in a microwave-safe bowl and cover it loosely. Microwave on high until hot, about 1 minute.

Lay 1 nori sheet on the bamboo mat. Spread 1/2 of the rice evenly over the nori, wetting your hands or using a spoon with a little water to prevent sticking. Arrange 1/2 of the cucumber and carrot slices on the top half of the rice, then roll the nori around the rice and vegetables, using the bamboo mat to assist. Repeat with the remaining nori sheet, rice, and vegetables.
