Rhubarb Snickerdoodles

Combine rhubarb and 1 1/2 teaspoons sugar in a large bowl and toss to coat. Let sit for at least 30 minutes, or until the rhubarb starts to release its juices.

Drain off the accumulated juice from the rhubarb and discard it. Add cornstarch to the rhubarb and toss until evenly coated. Set aside.

Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment.

Beat butter and 3/4 cup sugar in a large bowl until fluffy, about 5 minutes. Add the egg and vanilla and beat for another 3 minutes. Add the flour, cream of tartar, baking soda, salt, and nutmeg, and mix just until combined. Fold in the rhubarb.

In a small bowl, stir together 3 tablespoons sugar and cinnamon.

Scoop 1 1/2 tablespoons of dough, roll into a ball, then roll the ball in the cinnamon sugar until fully coated. Place the dough balls 1 1/2 inches apart on the prepared baking sheets. Repeat with the remaining dough.

Bake in the preheated oven, one baking sheet at a time, until the cookies are set and just starting to turn golden, 15 to 20 minutes. Let the cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
