Scrumptious Shrimp Scampi Linguine
  1. 1

Bring a large pot of lightly salted water to a boil. Cook the linguine at a boil until slightly firm, about 11 minutes. Reserve 1 cup of the pasta water; drain the linguine well in a colander set in the sink.

  2. 2

Melt 2 tablespoons butter with 1 1/2 tablespoons olive oil in a large skillet over medium heat. Add the bell peppers and the garlic; cook and stir until the peppers are softened, about 10 minutes. Stir in the shrimp; cook and stir until the shrimp turn opaque and pink, about 5 minutes. Transfer the shrimp to a bowl and set aside, leaving the peppers and garlic in the skillet.

  3. 3

Stir the wine, clam juice, and lemon juice into the skillet; bring to a boil over medium heat. Add the remaining 2 tablespoons butter and the remaining 1 1/2 tablespoons olive oil; return the shrimp to the skillet. Stir in the reserved 1 cup pasta water, the parsley, the cream, the pepper flakes, and the salt. Add the cooked linguine; toss gently to coat. Simmer the scampi over medium-low heat to let the linguine absorb some of the sauce, about 5 minutes; serve hot.
