    In a large nonstick skillet, combine olive oil and butter, and melt the butter over medium heat. Add the shallots and cook until softened, 2 to 3 minutes. Stir in the garlic and cook until fragrant, about 1 minute.

    Pour in the white wine and lemon juice. Season with salt, black pepper, and red pepper flakes, and stir to combine. Bring to a boil and cook for 4 minutes.

    Add the shrimp and 4 sprigs thyme, and cook until the shrimp just start to change color, 2 to 3 minutes. Remove the shrimp from the cooking liquid, place them on a plate, and set aside.
