    Pour the eggs into the hot skillet and cook until the edges start to set. Lift the edges so any uncooked egg can flow onto the hot pan, about 1 minute. Flip the omelet in one piece and cook until fully set, about 30 seconds. Move the omelet to a cutting board, slice it into 1/2-inch strips, and set aside.

    Heat vegetable oil in a wok or large frying pan over high heat. Add the onion, leek, chile peppers, and garlic, then cook and stir until the onion is soft, 3 to 5 minutes. Stir in the chicken, shrimp, coriander, and cumin; mix well, then cook and stir for about 5 minutes.
