Line a plate with two paper towels. Set the tofu on top, cover with two more paper towels, and place a heavy plate over the stack. Let it sit until liquid comes out of the tofu, 5 to 30 minutes. Slice the tofu into 1/2-inch strips.

Mix the soy sauce, chili sauce, ginger, and hoisin sauce in a large resealable plastic bag. Add the tofu, turn to coat with the marinade, press out excess air, and seal the bag. Marinate in the refrigerator for at least 1 hour.

Preheat the oven to 375 degrees F (190 degrees C). Coat a baking sheet with cooking spray.

Take the tofu out of the marinade and shake off the excess. Arrange it on the prepared baking sheet. Discard the remaining marinade.
