Citrus-Chili Marinated Grilled Chicken Thighs

Citrus-Chili Marinated Grilled Chicken Thighs balance sweet brown sugar and soy umami with bright lime and orange, while a hint of curry and chile-garlic heat lingers pleasantly. The thighs stay juicy on the grill, picking up a lightly caramelized glaze from the marinade. Serve for a relaxed weeknight dinner or a backyard cookout with rice, grilled veggies, or a crisp salad.

Citrus-Chili Marinated Grilled Chicken Thighs
  1. 1

Put the soy sauce, brown sugar, lime juice, orange juice, sweet chili sauce, chili-garlic sauce, garlic, and curry powder into a large resealable plastic bag. Seal the bag and knead it with your fingers to combine everything and dissolve the sugar. Add the chicken thighs to the marinade, press out the air, seal the bag, and refrigerate for 4 hours or overnight.

  2. 2

Preheat an outdoor grill to medium-low heat; lightly oil the grate.

  3. 3

Take the chicken out of the bag, pour the leftover marinade into a small saucepan, and boil it at a full rolling boil for about 1 minute to sterilize it.

  4. 4

Grill the chicken thighs until the centers are no longer pink and grill marks appear, about 25 minutes, basting them generously with the sterilized marinade as they cook.
