    Whisk olive oil, wine, lemon juice, vinegar, salt, black pepper, thyme, oregano, tarragon, pepper flakes, and cayenne pepper in a large bowl until well combined; then whisk in the onion and garlic. Add the chicken cubes and stir to coat thoroughly.

    Pour the chicken mixture into a resealable plastic freezer bag, squeeze out the extra air, and seal. Wrap the bag in a paper towel; place it into another resealable plastic freezer bag, positioning the zippers on opposite ends. Refrigerate for 2 to 3 days, flipping every 12 hours.

    Preheat an outdoor grill to medium-high heat and lightly oil the grate. Soak wooden skewers in water for at least 30 minutes.

    Remove the chicken from the marinade and shake off the excess. Thread the chicken cubes onto skewers. Discard the remaining marinade.
